Yum

I've been making this recipe a lot lately. Desmond is a bit of a fitball about food these days, so I've upped the nutritional content with molasses and flax meal. The loaves come out dense, moist, and not too sweet:

WHOLE WHEAT BANANA BREAD
1/2 cup butter, softened
1 cup brown sugar
2 eggs
2 T molasses
2 T flax seed meal
1 cup unbleached flour
1 cup whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 cup mashed banana

Cream butter and sugar; beat in eggs. Add molasses and flax meal. Mix dry ingredients together, add to butter/sugar mix. Stir in mashed bananas.

Bake in a greased loaf pan at 350 degrees for about 50 minutes, or until a toothpick comes out clean.
